Keep a short diary of how you use the room. Note where two people cross paths, where groceries land and which drawers are always full. Those details are more useful than choosing a cabinet door first.
Put the details in the plan.
Settle the appliance list, lighting and storage plan before fabrication. Ask which decisions must be made before work begins and how changes are documented.
Bring it to the site walk.
Bring photographs, a list of what is not working today and any constraints on access or timing. The aim of the first visit is to turn those observations into a scope you can understand.
